Growing Organic Vegetables
The decision to grow organic vegetables is undoubtedly a good one. Organic gardening removes the dependence on chemicals. This means that there are no artificial or commercial pesticides, herbicides, fungicides or fertilizers that are applied to the vegetables from the time they are planted up to the time that they are harvested.
Growing your own organic vegetables is best, of course. You feel safer knowing exactly what was used on your vegetables before they got to your table.
Grow only those vegetables that you like eating. Thus, it is very important to make a list of all the vegetables you plan to grow. List them by family. Knowing the vegetable families will help in planning rotations.
When you start to grow organic vegetables, you will use common household items like vinegar and soap to prevent pests and weeds. Organic growers rely on developing a healthy, fertile soil and growing a mixture of crops.
Set up a planting schedule around the two major growing seasons. Organic vegetables to plant during the cooler season would be broccoli, carrots, lettuce, peas, potatoes, and spinach. During the warmer months, it’s best to plant vegetables like corn, beans, peppers, melons, cucumbers and tomatoes.

Organic tomatoes and mozzarella
Thinly slice three to four organic beefsteak tomatoes
Slice a ball of fresh organic mozzarella (such as Organic Valley)
Tear 6 to 8 organic basil leaves
Top tomatoes with mozzarella, then sprinkle with torn basil pieces. Drizzle with organic olive oil and balsamic vinegar, and season with kosher sea salt and pepper.
Sautéed organic veggies on couscous
two organic zucchini, sliced
one cup of organic mushrooms, sliced
1/2 organic onion, chopped
one cup of organic broccoli, chopped
three cloves of garlic, chopped
Combine vegetables in a large pan and sauté with two to three tablespoons of organic olive oil. Sauté until veggies are tender. Meanwhile prepare organic couscous according to directions on package. Put couscous in a serving dish and top with the vegetables.
Dill corn
Heat grill to high. Wrap individual husked organic corn in aluminum foil packets with a few sprigs of fresh dill. Grill about 20 minutes or until corn is cooked through.
